Bourbon Peach Cobbler

Ingredients
  

Filling

  • 2 15 oz cans sliced peaches
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 cup whole milk
  • 4 tsp baking powder
  • 1 tsp sea salt
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • ½ tsp nutmeg

Topping

  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 3 tbsp butter
  • ¼ cup bourbon optional
  • ½ tsp nutmeg
  • Whipped cream for serving

Instructions
 

  • Preheat oven to 400° F. Prepare a 10 inch cast iron skillet or a 9"x13" baking pan
  • In a large saucepan over medium heat, whisk together brown sugar, ½ cup sugar and ½ teaspoon nutmeg. Mix in butter, bourbon and 2¾ cups of water. Bring to a boil, stirring until sugar is fully dissolved. Remove from heat and set aside.
  • In a large bowl, mix flour, 1 cup sugar, baking powder, salt, cinnamon and ½ teaspoon of nutmeg. Add milk and vanilla and combine.
  • Fold in sliced peaches. Pour filling into prepared pan, pour on topping.
  • Bake for 50-55 minutes, or until cooked through and light brown.
  • Let cool 15 minutes before serving.
  • Enjoy with whipped cream.
